i am entering my fourth month of raw living... however during this time i have been consuming raw milk and cheese. looking to transition away from these foods yet i find myself craving them. any advice?

and that was three years ago now! You just soak Org raw almonds overnight in glass, separate the soaking water and add new springwater, put in a blender, (like 5x water to almonds) then strain the almond meal from the "milk"! super easy and sooooooo amazing. Oh and I add a pinch of sea salt, and a little agave nectar.
there's so much you can do with it after that too! -

I hate to waste it... seems it would be good for cookies or something. I have just been throwing it into smoothies for now... -

ESSENE BREAD:
1/4 to 1/2 cup Almond Meal
1/4 to 1/2 cup Soaked Walnuts
3-6 Soaked Pitted dates
2 Cups Sprouted Wheat berries (or 3-4 cups...it depends how wheaty you want it)
1/4 cup apple (chopped)
i clove garlic
2TBSP olive oil
Blend all ingredients in a food processor/blender. It's a sticky job!!! but well worth the trouble......
Next spread thin (like 1/2" tall) onto teflex sheets like naan bread. or like already sliced large pieces of toast... maybe like 6' long by 3 1/2" wide...
Dehydrate on one side for like 6 hours @ 90 degrees
then peel the bread off the teflex sheets and continue dehydrating for perhaps another 12 hours or so. When done its crispy on the outside and chewy on the inside!!! like toast!!!!!!
you have to experiment with your own variations:-)

Thu, June 5, 2008 - 6:30 PMBesides using substitutes, which often helps in the beginning, try to figure out if there is anything nutritionally you might be missing in your current diet that was included in your old diet (things that are healthful, since you dont need to replace the stuff that isnt).
A vegan diet does not contain much dietary cholesterol, so you might want to increase your intake of plant based saturated fats (the opposite advice that should be given to most Americans). Nuts and avocados provide more satiety than salads.
I like the almond/oat milk mix. -

I looked for groats, because someone said that's the kind you can sprout, but all I found were 'steel cut' so will they still sprout? Or does it matter what kind of oats you get for the milk? I think instant oats are steamed (same with rolled?) Does anyone know? -

Fri, June 6, 2008 - 8:52 AMi work at a health food store and one of my raw coworkers informed me that the majority of oats you will find are slightly steamed, and therefore rarely raw. he said go for raw oat groats. also - almond milk is decadently delicious - but its going to be really difficult to find truly raw almonds pretty soon since they are all going to be blanched (legal pasteurization of almonds.) -

You can blend them into instant creamy milk (add hemp seeds to make more milk and increase the nutritional value), or use them as cheese, make ice cream out of them, or pie filling. Cashew butter really helped me transition away from animal fats...but like you, i still occasionally really want some dairy. I don't know what it is that i can't seem to quit, yogurt just makes me feel good, especially homemade raw goat's milk yogurt.
I have had homemade almond milk almost daily for the past year of 100% raw. I am experimenting with other milks now because sometimes i'm out of almonds and i won't cheese out and get the Trader Joe's ones anymore, since they are not really raw. The pulp can be made into crackers, cookies, and breads. I always use mine for something, as expensive as raw almonds are, i can't afford to waste something so useful and good for me.
Some raw restaurants make pressed nut cheeses and i've heard that they're amazing. For the most part, it seems that nuts and seeds are the closest thing to cheese you can get. For ice cream, try fresh young coconut meat too. One of these days i will get around to making coconut Kefir, and that may be the thing that gets me off of yogurt.

Fri, August 8, 2008 - 7:45 PM::ACHEM:: raw cashew cheese is FAR nummier than cow/goat cheese... which is a reason that I initially gained weight when i went vegan, and then lost it again when I decided to force myself away from inhaling nuts.
Though the drugs that were in the dairy, you can't replace. Well you wouldn't want to anyways. The cravings take a while to go away, it's the same for everyone. Luckily for me I always had a real soft spot for other creatures and when I found out what was going on, it disgusted me enough to permanently lose my appetite for dairy altogether.
There's an idea, if not a gory one - think of animals being tortured in all sorts of horrible and insanitary ways every time you feel like having dairy and that should take away the cravings. Then go have some nice raw nut cheese :) putting garlic in it or something sweet like raisins can give it a wicked kick too.
