suggestions for a main dish?

i am hosting a raw food potluck this weekend and dont know what to make as a main dish. i know that i will be serving up a coconut cream pie (recipe courtesy of the cafe gratitude "cook"book) as well as a fresh durian.

any suggestions for a rockin main dish? and remember i will be serving this to multiple guests, so something practical in that regard.
recipes would be most appreciated.

    i made an amazing green curry a few weeks ago, using both spiralized zucchini and kelp noodles. Of course, i didn't write down the recipe cuz i suck...and i don't know for sure about the green curry paste (if it's raw, prob. not) but it sure was good. I will try to remember what i put in the sauce. I think you would like it since you're so into coconuts.

    Lets see...in the Vitamix:
    young coconut meat and juice
    green curry paste (little at a time, to taste)
    some onion and garlic
    celery
    lots of freshThai basil
    ginger
    sea salt and black pepper
    lime juice
    and i may have put a bit of agave in there, just a touch, and possibly some dulse for extra flavor. If you have fresh galangal (Thai ginger) that would enhance the flavor a lot.

    So you just pour this sauce over the noodles, add a lot of thinly-sliced cabbage, skinny-cut carrots, whatever veggies you want to add--red pepper, mushrooms, etc. and make sure you have more sauce than you think you need because it gets absorbed. Mix that all up and let it sit in a big bowl, covered, at room temperature for at least an hour. I put a plate on the top to keep the noodles pressed down into the sauce. Garnish with liime wedges and whole basil leaves. A dish like this would go quite well with durian and coconut pie.

        madame7 you inspired my main dish!

        i decided i am going to make curried cauliflower in a peanut-curry-cilantro sauce.

        here is the recipe for the sauce:

        1-2 cups of wild raw jungle peanuts
        a splash of coconut water
        a touch of lime juice
        a handful of cilantro, minced
        a finger of ginger, grated
        2 cloves of garlic, minced
        a dash of cayenne
        and curry powder, as much or as little as it takes

        marinate cauliflower in sauce overnight so it soaks up all of the flavors!

          oh and that reminds me....one year i did a raw thai coconut soup for a potluck. the leftovers were even better the next day because the soup had time to absorb all of the flavors. i could try to remember the recipe if anyone is interested.

            awesome... i happen to have both cauliflower and coconuts in the fridge right now. Forgot the cilantro though...
            i think some thai basil would add a nice touch to your dish. I grew it in my garden last year because i love it so much. gotta make room to plant much more this year because my kids kept eating the leaves right off the plants, and...well, you can never have too much basil.

            what's up with these jungle peanuts? Everything i've read about peanuts says that they are toxic when eaten raw.

              i dont know, ive read bad stuff about peanuts too. (that they are related to a mold, and so on)
              but the wild jungle peanuts are labeled 100 percent raw and we stock them in the raw foods section at the health food store i work at. david wolfe is also a huge proponent of jungle peanuts, saying they are rich in nutrients including b vitamins and such. pehaps they are edible raw because they are a different variety, maybe not a close relative of the common peanut? just an assumption.

              i know the local farmers market on saturdays often has thai basil, i will check there for some. thanks for the tip!
